Mass Airflow (MAF) sensors do a pretty good job once calibrated.
Engine dyno or Chassis Dyno? I've ran hats on carbureted engines on an engine dyno that measure actual airflow.
Yes, it can be done - some engine induction systems may be supported directly by the dyno', like the "top hat" for US V8 carb's/TBs, others may need some thought and fabrication, and it may not be supported by the dyno' being used, regardless, and need to be separately logged.
