In my 2002 mitsubishi l200 build I'm incorporating both electric power steering and a digital dash. The original truck used cable to do the dash reading.
Anyone have any suggestions on how to incorporate wheel speed sensors into the oem hubs to get a dash reading?

That looks like a spindle, not a hub (the hub is the rotating part).

How would I go about doing this as I have no access to a lathe to machine a piece like this
I have done something similar to David's method before but with the sensor just pointing at the back end of the wheel studs. Probably not suitable for traction control, but perfectly adequate for vehicle speed. A GS100502 is often a nice easy sensor to mount for this sort of thing.
A couple of other options:
Often you will find some other model car from the same manufacturer that will have an electronic speed sensor that will fit into the speedo cable hole in your gearbox. There are aftermarket universal electronic gearbox speed sensors also. Example mitsi one: https://www.aliexpress.com/item/1005006143285888.html
