You are probably referring to sensor ground.
It is plugged this way because the voltage (+5v) is supplied by the ECU. We want to make sure there are no ground offset that could "affect" the signal. This could happen if we plug a sensor ground the the chassis, which is normally used with +12v.
These sensor grounds are usually for critical sensors like TPS, MAP, IAT, CLT...
