I would like to ask, how to tune without knock sensor/device, how would I know when I should stop advancing the ignition?
The engine or chassis dyno is the tool used to tell you what ignition timing is required for maximum torque (more advance is not always better). If the engine you are tuning doesn't have knock sensors (and even if it does), you should still use knock monitoring tools (headphones) to listen for knock while tuning on the dyno.
If you don't have either of those tools, I would only use a conservative ignition timing (examine stock maps for the engine, or similar engines).
Another way to avoid knock, is to use a high octane fuel. Knowing the compression ratio will be the first step to choosing the correct octane fuel for the engine.
