Mainly working on map sensor ECU, s . How do I go about the calibration of the volumetric efficiency table.

Can't help, personally, but for those that can it would help if you provided details like the device and software used for the interface, the ECU, the vehicle, etc?
So basically I'm working on ecu's that only run map sensors, no maf, no target afr, only the later one's have knock. I have completed the course here and any time there's a mention of map and ve table's there's no follow up explanation of how to carry out a tune of this nature.

I don't what you mean exactly, but if what you want to do is adjust the afr and you don't have an afr target in the software definition that doesn't matter. You are going to need a wideband sensor attached to your exhaust. Then, you are going to need a datalogger so you can know where in the VE table the engine is operating and make your changes there.
