In the "Fuel Models" module, it says that one advantage of the injector time model is that it provides a closer approximation of the engine’s volumetric efficiency. But I’m a bit confused about this—wouldn’t the volumetric efficiency (VE) model be a better way to approximate the actual VE? Also, I’m not quite sure in which situations the injector time model would be more beneficial than the VE model.

Yes absolutely a VE based system will have table values that most look like actual VE. For those who don't have that available to them, what Andre is saying is injector on time models which have a background calculation to account for manifold pressure change give you a flatter value curve, since IPW table values don't have to step up based on manifold pressure increases. This allows the SHAPE of the IPW table data to more closely resemble the SHAPE of a VE curve. I hope that clarifies things. There's the ideal way to do something, but then we also try to give you workarounds and ways to get the most of what you have available to you.
