since the frequency set in the dsp of the ecu is in relation to bore size, what if you bore the block? Does this throw the frequency off and give inaccurate readings? If so, how do you go about fixing this?

Have a quick play with this calculator: https://www.phormula.com/KnockCalculator.aspx and you'll see that the amount you're going to bore the block doesn't make a massive difference to the knock frequency. Most ECU's will have selectable filter options on the knock input though, which will allow you to dial in a better signal to noise ratio.
