i see some tuner do it by using datalog sensor rpm,fuel injector and speed
There are many websites that demonstrate the math required to estimate horsepower from fuel flow. Start with one like this one:

Once you've calculated the horsepower, torque could be calculated as TORQUE = (HP * 5252) / RPM
You will need to have I2 Pro (which means the Pro Analysis option is needed for your M800 or MoTeC dash) in order to have the math channels features.
