When watching the step 3 video, I realize that you slice 1 wire with 5 others but in the schematic provided in step 2, there are 7 wires ( ECU1, ECU2, Body 2, Body 3, FPMP, PWR and CAN1) so my question is why is their "only" 5 wires and not 7 ?

The picture provided in step 2 is a physical layout diagram, which shows how the harness sections are routed and branched. In step 1, there is a document that shows how the actual wiring connections inside the harness are made, you'll see in the power supply section the output of the ecu fuse (FUSE.ECU.2) needs to make a connection to the five items listed, thus the splice performed. Hope that clears it up :-).
