I'm going to mock up most of my wiring on the bench, mainly for simplicity and will then extend cables before installing.

I use a bench-top supply similar to the one you have posted. One nice thing is you can observe the current consumed by the device you are powering. Useful for understanding if that back-lit color dash needs 2A or 600mA. And because it can be current limited (unlike a full-size car battery), you can test the harness without a short melting anything.
