In the worked example, 20% fuel was added to the tables with max torque, but I noticed you mentioned it was project specific.
In a stock application, would you add the 20% to the whole table, as opposed to the working example?

There's no hard and fast rule about how to add the extra fuel. You can try adding it to the whole table, just keep in mind this may impact your low speed driveability or exaggerate throttle response.
