What is the best options for a single channel and four channel EGT to use with a Link G4+ Fury?
Motec offer a single channel thermocouple amp that I've used in the past. You should be able to get one from any Motec dealer and since you're in NZ I'd suggest you try Richard at Motorsport Electronics (Search MSEL).
For a 4 channel unit I'd be inclined to consider the Haltech TC4. This can communicate via CAN as we have done in our engine dyno installation. The Fury also is compatible with the Motec E888 but that has 8 x EGT amps and is probably a bit overkill cost wise.
I use TF electronics. Has 8 channels and a extra voltage channel as well. Have mine setup over CAN to the LINK Thunder.
