Maps, no, trims to modify the current map, yes. If you're using ESP look into 'Rotary Trim Module' under 'Setup -> Main Setup'.
Once that's configured and you've wired in a rotary switch correctly you can add a new axis for your target tables based on the input the switch is pointed to.
