I would like to know if i could teach my self with a Honda 110cc motorbike engine
how to work on an engine.
i know it's different to a car engine or assymble but the single cylinder works on the same
stroke structure?
Im attending the Practical Engine Building Starter Package.

My first engine building experience was in school shop class (1973) rebuilding a single-cylinder Briggs and Stratton engine. So yes, you will learn the fundamentals with only one cylinder -- heck if you go into building motocross motorcycle engines, you may never do more than one cylinder.
You should be fine with the single cylinder - remember, single cylinder test engines are used extensively in engine development for vehicle manufacturers'' and motorsport specific engines.
Other advantages are if the engine is in common use you may pick up paying clients who want their engines worked on, and you may have a handy supply of cheap test engines, in case of learning mistakes.
