How to find correct air to fuel.

Greeting, completed the road tuning course i must say the 10 step was much easy to understand how ever my only issue understanding im my case my first tune will be on my mr2 3sgte stock motor being as a turbo car, 1) i kind got lost on how i would go about finding the correct air to fuel ratios if building a map from start if anyone could point me in rite direction back into the course on which module i should pay close attention or any other way? Thanks hope someone could understand my question
