when adjusting the fuel map and ignition map on steady state tuning how do you load the engine on the dyno ,is there a loading rpm on the dyno setup or is there different methods for each dyno?

It will depend on the brand of dyno. On a rolling road typically you will enter a road speed that you want to maintain and by virtue of the gearing, there is a direct relationship between road speed and engine rpm. On a dynapack on the other hand the relationship between speed and rpm is configured during the vehicle setup and from here you will directly request an engine speed.
