HI

i have watched all of the tuning videos, i have an issue about how can i know the car is based on what ? like MAF, VE, TORQUE BASED

MAF or VE are different ways of calculating airflow.

If there's a MAF scaling table present in the ECU, MAF is likely used.

If there's a VE table or VE tables, VE is likely used.

On some vehicles, both MAF and VE are used for airflow calculation. On those vehicles depending on the software you're using there may be a monitor that indicates which system is currently active, or a hybrid of the two, or you may have to determine when each is used with testing of your own.

Torque is not an airflow calculation per say, but some ECUs do have a relationship between airflow and torque. On those ECUs, airflow is often used as part of the torque calculation, and in some cases there's a check which back calculates airflow from torque, to see if the vehicle is operating within the expected model.
