I decided it was about time I learnt how to map my own cars,

Is your Evo stock just now? If so get yourself a tactrix cable and a copy of evoscan to get you started, this will let you datalog everything from the stock systems. For editing Evo files there are a fair few choices of software which all use the tactrix cable.
