FWIW, i am running a Motec M150 on an LS.

My old harness has all 8 coils as well as 3 or 4 sensors all running off of one 0v reference channel.

crank and cam each had their own.

then another 3 or 4 sensors running off of a third.

What factors go into such a decision and when is too much, if ever?

In the M150, you should use the grounds that match the power supply. This is so that sensors that have a ratiometric output (ie. relative to the 5V power supplied) will be correctly adjusted in the M150. That is why most sensors setups require you to define which of 5V reference (A, B or C) to use.

Also note that since the temperature inputs have a built-in pullup to a specific 5V supply, you have to use the matching 0V for those. See the help for any Sensor Voltage Reference.
