Was wondering if the Stoichiometric change due to elevation or temperature changes?

Does a Lambda sensor automatically adjust to the current conditions?

No, the stoichiometric air fuel ratio is a fixed value based on the composition of the fuel. This doesn't change with temperature or elevation.
