I thought you need to make the A/F Ratio richer to help with temperature issues in the Cylinder and with hotter air entering the combustion chamber we're at risk of knock

There's two different things going on here. The air temp correction discussed in the EFI Fundamentals course is what you need to change the fuel delivery by to maintain a theoretically consistent air fuel ratio as air temp changes. Of course that may not be what you want/need to do. It will really depend on your particular engine. Some will be more prone to knock as IAT rises and a richer mixture may help. It's just all about testing to find what works for your engine.
