Hi
Is there any preference where in the concentric wire harness to place the shielded wires for crank and cam sensors?
In the center or on the outer layers?

I typically use the shielded wires as the centre core of a concentric twisted harness as it's a little harder to incorporate these in an outer layer neatly.
