There's tons of awesome tips in this EFI wiring course to build a high quality harness. One of them is the Kapton Tape tip. I'd been using aluminized HVAC tape (ghetto) for similar reason in the past.

There are quite a few different types and sizes of Kapton Tape. I cannot seem to figure out what size is best or if it's really of any importance. I'd think you want it to be thick enough to provide strength and not so wide as to impede harness flexibility but what size would that be?

I'm getting ready to build a harness for a air pump I installed. I'll cut my teeth on that then I need a new injector harness.

At the end of the day, there’s not really a “one size fits all” there are pros and cons to the different widths. For the price, I keep a few sizes on hand. The three common sizes I’ve come across (from our local electronics supplier, MSEL) are 6mm, 12mm, and 19mm, and I go through the 6mm more than the others.

There are other good uses for the thicker tapes which make them good to keep on hand too. I use the thicker a lot for holding aluminum pipe together when welding or covering components on a PCB when reworking or using a hot air gun to work with smaller components.

If you don’t want to buy several, go with the 6mm Kapton. The main issue you’ll run into with wider tape is trying to wrap small connectors or smaller wiring sections, it can be tricky to get a neat lay. Wider tape is still nice to have for larger bundles where you’d otherwise need a lot of 6mm to restrain and cover everything neatly.
