I'm building a wiring excel document for my current project and I'm making it based using the sample document from the practical wiring course. however I'm not sure on what the wiring section title with the colored block is supposed to represent. Can someone please let me know what that section is for?

Are you referring to the column of three colored squares with the heading "CODE"? This is for wiring identifiers such as these from RaceSpec;

RaceSpec Ident Kit

These identifiers are applied to the ends of wires to distinguish them from other wires, especially when multiple wires share the same base color. In the wiring document, the colored blocks represent the color combination and sequence used on the wire, allowing that specific wire to be easily referenced within the harness.
