Here my trouble i need to calculate the stroke of an engine thats not factory made im assembling a ej257 with the factory ej207 crankshaft and i need to calculate the rod to stroke ratio to find the perfect rod for my build but without knowing the stroke isnt an easy task. Note that i dont have all the required part in hands to measure it manualy.

That would be my suggestion. Alternatively you can dummy assemble the engine with one piston and a rod and use a verier calliper to measure the stroke of the piston in the block.
