I'm just starting out in engine building - what torque wrench should I get to work on engines?

It would makes no sense to buy only a 20-400NM torque wrench and tighten a 20NM bolt with it..

I'm thinking 2 or 3 wrenches, 1-25NM, 5-60NM, 20-200NM, would that cover most if not all tighening jobs on an engine?

The snap-on torque wrench I use handles 18-340 nm which is enough on it's own for most jobs. The wrenches you've mentioned should be sufficient but I don't know if you need the middle one since the smallest and largest cover the full range of torque anyway. You may find that there are a few larger bolts that may require more than 200 nm but these would be pretty rare.
