I've got a VQ35DE with a built short block (Wiseco pistons, K1 rods, HKS head gaskets, L19 head studs), the car currently makes 650whp on a single 6266 turbo @ 20-21 psi.

I just picked up a set of GSC Power Division billet turbo camshafts (T2's), 274 degrees of duration & 11.28mm of lift (https://www.power-division.com/gsc-power-division-billet-vq35de-t2-camshafts.html).

I just need to finish selecting the valve train… I was thinking about either Brian Crower or Manley single springs & retainers:

Based off the specifications would these be okay? I'm looking to run the car out to 7500 RPM and 25 psi of boost max.

Given that your specified cam profile is not far off Brian Crowers "race" profile which specifies the valve springs highlighted I would say you would be fine with either. They are certainly OK on coil bound limit.
