Would there be any downsides to having a connecter mid way through a twisted canbus wire? For example creating a sub harness for a digital dash to easily swap between two race cars using a 4 pin connector which it will share with power and ground. Thanks :)

No problem having short stubs to connectors, many factory race cars are supplied with harnesses that have connectors for optional CAN devices (camera, logger, etc). Connectors often have Ground/CAN-/CAN+/12V
