If I've recently had my ej255 modified with GSC stage 1 camshafts and the compression raised from 8.4:1 up to 9.1:1 what do I need to do to to ensure that my startup map won't allow the AVCS system to put me in a situation where the valves interfere with the pistons?

Piston to valve clearance should be checked during assembly.

If the cam actuators could potentially allow contact, this is a mechanical issue not something you can tune around.

Sometimes limiters are fitted inside the cam actuators to reduce the range of advance or retard.
