Hi! I am following this course through and I have an issue with idle.

I can get the car to start, have properly scaled the fuel table, however it floods after about 1 minute running (not at idle, around 2000RPM). And I am talking hydrolock flooding, you have to pull the plugs to turn it.

I’m thinking warm up enrichment issue but if you could put forward any suggestions. It’s an XF Falcon EFI running a Megasquirt MS3X

All cylinders or just one or two?

If it's just one or two, I'd suggest getting all the injectors checked, they may be leaking badly.

If it's all cylinders, I'm rather surprised it actually kept running to the point of stalling - that strongly points to a massively over-rich idle setting and you REALLY need to revise your settings - are you using the lambda with that ECU?
